Here is my take on the Recipe Challenge over at Check it out there are several artist who have made submissions that are great. I wanted to share my Black bean chili recipe I got from my daughter-in-law, Beth. It is so simple and a great meal to have ready when you get home from work.
  1. cook 1 #1 bag of black beans in a crock pot, covered with water for 6-8 hrs.
  2. when finished add 2 cans of tomato paste, one can of Italian tomatoes, 1 pkg. of Cincinnati Chili Mix, stir and reheat for 1/2 hr in crock pot.
  3. Serve over rice, add shedded cheddar cheese, onions, oyster crackers and sour cream 
Awesome in the summer or winter. Hope you enjoy.
